If you ever find yourself on Amtrak, don’t miss the Chipotle Black Bean and Corn Veggie Burger. Slightly spicy with hints of cumin and garlic, they were in fact a real treat garnished with tomato, lettuce, and onion, ensconced in a toasted Kaiser roll. The kettle chips and pickle didn’t hurt. We washed them down with small glasses of The Prisoner (one of the benefits of a private room) and enjoyed a small selection of California Zephyr memorabilia (which included vintage dining car cards) as the Rocky Mountains glided by the window of our roomette. We became train people on that trip, and are already plotting our next one.

January’s National Soup Month! It’s also cold, at least here, which makes this a perfect month to cook up a big pot of minestrone, or tomato bisque, or tom yum, or, well just about any soup’ll do!
